Molasses The First, the leaves are stripped off the (sugar) cane and the bare stalks left standing three or four days. After the tops have been removed, the stalks are cut near the ground and then the juice from the cane is squeezed and collected. It is through a four-step boiling process that the dingy green liquid transforms and becomes the golden brown treasure called molasses, which comes from the Latin word mellaceus, meaning "honeylike."
